This is one of my favorite "Nate" dishes! Nate cooks the tofu, browning it very nicely on each side, which really makes a huge difference when making it at home. I find that on nights he's cooking stir-fry, I take lots of little trips into the kitchen to nab delicious mushrooms. Aside from the tofu and mushrooms, Nate adds an assortment of vegetables we have hanging around the house, and finish it off with some organic basmati rice. Yum!
